“And thou, Melkor, shalt see that no theme may be played that hath not its uttermost source in me, nor can any alter the music in my despite. For he that attempteth this shall prove but mine instrument in the devising of things more wonderful, which he himself hath not imagined.”

no actually Gandalf only guided Aragorn of course Gandalf probably knew of the existence of that seed, but still it was Aragorn who found it and planted it as for the answer...what was that big eagle called...Thorondor
strange I clearly remember having posted Thorondor as an answer 2 days ago, but it seems someone from the moderation team made it go away...or maybe I just have a bad memory anyway, Thorondor the eagle.
That's a tough one! I don't really have an idea what could be meant by this riddle. I thought of the palantiri, just because of the last two lines, but the first two don't match with that...

ok...so first I though about Anguirel and Anglachel, but it didn't fit because both the fate of Anguirel and Anglachel are unknown so I thought about Orcrist and Glamdring well...Orcrist does lie under hills Thorin was devoured by greed Glamdring did eventually end up in Valinor (maybe the West-Tower) and...the ladies...makes me think about the three trolls, but they didn't grace it...
You are DEFINITELY on the right track, but wrong. You caught the reference to the brother in the West-Tower ( note the caps indicate proper name ). The other brother lies under hills beyond mortal lands.... hmmmmmm

ok, so its Telperion because, the White Tree of Gondor did eventually end up in Minas Tirith and his "brother", Telperion out of which the tree was made, lied in Valinor, after beeing destroyed by Ungoliant
Minas Tirith is the Tower of Guard and the Tree's master/mistress was not destroyed by pride or greed, nor is there an account of Teleperion being buried beneath a hill.
Your Valinor - Middle-Earth connection is good though. This should make it easier...
Elf of the Spray, my first master's name
All his kin to me laid claim
Graced by the touch of three ladies hands
Beneath hills I lie beyond mortal lands
By pride and greed my last master was devoured,
My brother came to rest in the West-Tower.
